Some like the big loaves that require you to tear off bits of onion in strings. Some like the limp, ropy style you tend to find at The Varsity. And others prefer The Earl’s approach, where the beer-batter fried rings arrive in hot, crispy hoops that prove rich in flavor and substantial in body. It’s not that the other rings aren’t good, it’s just that The Earl’s are more proud and assertive.

Thinly battered and deep fried, the Varsity knows how to make good onion rings. The secret of the restaurant’s success is grease. This fact is evident in many dishes, such as chili dogs and French fries. Still, its use of grease works best on the onion rings, which are greasy but not obscenely so. The thin batter also adds to the flavor by not overwhelming the onions inside. A heart-attack in a box, the rings are a good snack but only on occasion.

Golden brown and crispy, The Earl’s onion rings are an anomaly in Atlanta because they aren’t dripping with grease, and the crunchy crust doesn’t fall off just as you’re about to pop them in your mouth. A dish of these small, salty Os is sure to satisfy.
