At IMPERIAL FEZ, they undulate about the room with candles on their heads while you loll about shoeless on the carpeted, pillowed floor. The drama would be unforgivable if the food weren’t so remarkably good. We favor the tagines, meats and vegetables slow-cooked in a clay pot. But everyone loves the b’stella, a starter of roasted Cornish hen wrapped in phyllo-like pastry and coated in confectioner’s sugar.
